Syrah
The Syrah grapes are not harvested until they have reached their optimum flavor development and ripeness. Picking takes place during the early morning cooler temperatures. In the cellar, the grapes are hand sorted, de-stemmed and cold soaked in stainless
Nebbiolo
The Nebbiolo grapes are not picked until they have developed their flavors to their fullest potential and are fully mature. The fruit is picked in the early morning when it is cooler so that it will be chilly when it gets to the winery. The grapes are manually sorted and de-stemmed in the cellar.
Chardonnay
The Chardonnay grapes are not harvested until they have reached optimum levels of flavor development and maturity. They are picked at night and delivered to the cellar fresh and cool. The grapes then undergo a “whole cluster press” process and are settled
