Winter nighttime temperatures can be cold, -7 to -1 degree Celsius. The temperatures
during the grape growing season are warm, exceeding 32 degrees Celsius, with some heat spikes ranging from 35 to 38 degrees Celsius prior to the harvest. In this case the vineyards are irrigated more vigorously.

retention.
Elaboration:
The Syrah grapes are not harvested until they have reached their optimum flavor development and ripeness. Picking takes place during the early morning cooler temperatures. In the cellar, the grapes are hand sorted, de-stemmed and cold soaked in stainless steel tanks for five days. The ' "free run", or highest quality wine, is then drained off of the skins. This free run wine is pumped into barrels for aging, an remains in the barrel until it is ready to be bottled. This Syrah was created with only free run wine. No press wine is used in this process.
Aging: 14 months in French oak, 25% new barrels, 75% single use barrels
