The soil at Rancho Gallardo (km 101) in San Vicente is clay-like with good water retention.

Elaboration:  The Chardonnay grapes are not harvested until they have reached optimum levels of flavor development and maturity. They are picked at night and delivered to the cellar fresh and cool. The grapes then undergo a “whole cluster press” process and are settled into stainless steel tanks for only 24 hours. The wine is then moved to French oak barrels for barrel fermentation. It is stirred periodically to enhance flavor development, and will remain in the barrels for approximately 12 months before bottling.

Aging:  12 months in French oak barrels; 25% new barrels 75% of single use
